Wild rice salad

  • 250g long-grain wild rice
  • a handful of fresh basil
  • 1/3 bunch of fresh parsley
  • 200g red pepper
  • sea salt and freshly ground black pepper
  • 1 lemon
Lemon Dressing
  • 6 tablespoons olive oil
  • pinch of salt
  • juice of 1 lemon

Why is it worth it

Wild rice salad is a combination of lightness and depth of flavor. Aromatic, fresh herbs, crunchy peppers and lemon dressing give it exceptional freshness, and wild rice makes it filling and wholesome. Perfect as a healthy meal for lunch or dinner!

Preparation

Cook the rice according to the instructions on the package. In the meantime, finely chop the pepper, prepare the lemon dressing, transfer the cooled rice to a large bowl, add the chopped herbs and the Fit&Easy Family package and the pepper, add the lemon zest and dressing. Season with salt and pepper and mix everything well.
